Allow infinispan client library version to be configurable/updateable

The script helpers/build/infinispan-client-setup.sh provides a way for users to download the infinispan client libraries into a container image based on the WebSphere Liberty images.
It currently has a hard coded version of the client libraries with no easy way to update/configure the version.
It would be better if the version was simpler to update/configure/override

It looks like the current version used is 10.1.9^*, from December 2023. Current version is 15.x. So, I wonder if any of the inconsistent behaviors we've been experiencing could be related.

(^*Although the build file seems to show only pulling 10.1.3, so I don't know why/how our pods show 10.1.9 jars installed)

Fixes in #691 and #744 should resolve the existing issues for WL with the infinispan-client-setup.sh script (primarily the yum failure on ubi-minimal) and incompatibility of client versions 10.1.x with Jakarta EE.

Original build file had a line versions:use-latest-releases -DallowMajorUpdates=false that bumped to the latest release for the major stream so 10.1.3 -> 10.1.9 jars.

Default version will be bumped to 15.2.6 in #691 and making the latest release bump an optional build variable
